Alys Beach's Town Center Added a Restaurant. It Didn't Add an Operator.

September 17, 2026

On July 2, 2026, a new dining room opened in Alys Beach's Town Center. The wood-fired oven was already going for the first dinner service, and the hand-painted tile along the chef's counter was still catching the late afternoon light off the amphitheater lawn. Anyone walking past that week figured the neighborhood's short list of restaurants had grown by one. It hadn't grown by an owner. Indaco sits a few doors from O-Ku, and both belong to The Indigo Road Hospitality Group, the same company, on the same stretch of Town Center, twenty-one months apart.

That distinction is easy to miss on a first visit and worth catching if you eat in this part of town more than once a month. A restaurant opening under a company that already runs the place next door doesn't behave like a new competitor angling for the same Tuesday reservation. It behaves like a second room in a house that was already built. Once you notice that pattern at Indigo Road's corner, you start seeing it everywhere else along Alys Beach's walkable dining core, and it changes how the whole rotation should be read.

Two Indigo Road Restaurants in the Town Center

Indaco opened with Executive Chef Dakota Watson leading the kitchen, built around a wood-fired oven, handmade pasta, and a chef's counter faced in deep indigo Italian tile. It sits a short walk from O-Ku, the sushi room Indigo Road opened in 2024. For a resident deciding where to eat, the practical read is simple. Indaco's dining room, with its blue and white tile from Red Rock Tile Works and handcrafted ceiling beams, adds a cohesive look to the block.

Two Walton-Run Businesses in the Core

Indigo Road isn't the first operator to stack two concepts on one Alys Beach corner. Jeremy and Angela Walton opened The Citizen in January 2021, a coastal tavern built around an 18-seat bar, a 12-seat raw bar, and a 120-seat dining room centered on a wood-fired hearth. When the original Fonville Press coffee shop, closed since February 2019, came back to life across the green, it came back under the Waltons' company too, expanded to nearly 4,000 square feet with a market, café, and bar built into one space.

Add it up and a pattern emerges. Of the handful of full-service kitchens inside Alys Beach's walkable core, four trace back to just two ownership groups. Indigo Road runs O-Ku and Indaco. Quest Hospitality, the Waltons' company, runs The Citizen and Fonville Press. That leaves George's at Alys Beach, the upscale casual restaurant known for its rooftop deck over town, as one of the few full kitchens in the core still operating on its own.

Caliza and the Beach Club

Caliza, the restaurant that looks out over Alys Beach's zero-entry pool, has a longtime general manager who has also overseen the Beach Club at Alys Beach. For anyone timing a night out around the calendar, Caliza closes seasonally, from November 29 through March 1.

What This Actually Changes on a Weeknight

None of this changes what's on tonight's menu. If Indaco is full, O-Ku is two doors down. The Waltons' company also runs The Citizen and Fonville Press. Four kitchens trace back to two ownership groups, a pattern different from four unrelated restaurants. On a Friday night, Town Center can feel less like browsing competing storefronts and more like moving through a compact dining core shaped by a few operators.

The Calendar Just Turned a Corner Too

The restaurant math lines up with a broader seasonal shift that's happening right now. Reels in the Amphitheatre, the free Thursday night movie series that ran from June 1 through July 27 with Henry's Pizza Truck parked on the lawn, closed out its family lineup in late July. Labor Day weekend wrapped the summer calendar entirely: a shrimp boil in Central Park on September 4, a yoga and sound bath session in the amphitheater the morning of September 6, and a Red, White and Blues concert that evening, billed as the send-off for the season.

The next major date on the town's calendar isn't a summer holdover. It's the Garden & Gun Society and Friends Gathering, October 22 through 25, a four-day weekend built around chefs, designers, musicians, and conservationists gathering in Alys Beach. This is the first year the gathering has opened beyond Garden & Gun's members-only Society list to the general public. That means Town Center's kitchens, the same four split between two ownership groups, plus George's and whatever window remains before Caliza's late-November closure, are about to host a wider crowd than usual for a single fall weekend.

A Cohesive Corner of Town Center

Town Center combines a cohesive design with a dining core where four kitchens trace back to two ownership groups. Knowing that doesn't change what you order tonight. It changes how you read the next headline about a restaurant opening on that lawn, and it's a useful thing to carry into a weekend like the one coming in late October, when every one of those kitchens will be working at once.

If you already call Alys Beach home and want someone who tracks this corner of 30A as closely as the calendar above suggests, or you're weighing what it would take to make this stretch of Town Center part of your own routine, Joshua Fowler is easy to reach. Let's Connect.
